Homemade rubs and sauces reflect North Carolina, South Carolina, Tennessee, Texas, Kansas City, city of Memphis as well as China and the Caribbean. Even the herbs used in the rubs are home grown. The recipes truly span the globe. The other important "ingredient" is the wood smoke flavor. The recipes are paired with such regionally appropriate woods like maple, oak, mesquite, and apple.
